EDIT2: The most noticeable differene between Chinese penhold and shakehand blades is handle length. Rather than 100mm or longer, Chinese penhold blades tend to be closer to 80mm. Some Chinese penholders play with cut down shakehand blades, like top U.S. players David Zhuang (used to use a cut-down Mazunov, now uses a cut-down Iolite) and Gao Jun (uses a cut down Matsushita Pro). So you can certainly play with them cut down. This keeps the handle from catching in clothing or hitting you in the face.
Some Chinese penhold blades (not all) have longer heads, particularly Yasaka, Avalox, Stiga, Butterfly. They also often have different shaped handles (usually flatter and wider) and throats (where the blade meets the handle). So there can be some more subtle differences.
